Buckwheat is a wonderful pseudo cereal that has the wonderful property of being gluten-free. As a result, it is actually not suitable for baking bread. By washing the buckwheat well and sprouting it, we have found a way to make wonderful bread out of it. It tastes particularly good toasted golden yellow.
